- 1 Tbsp. cornstarch
- 2 Tbsp. cold water
- 1/2 c. boiling water
- 6 Tbsp. granulated sugar
- 3 egg whites, at room temperature
- pinch of salt
Directions

1Mix cornstarch with 2 tablespoons cold water; add 1/2 cup boiling water and cook, stirring constantly, until mixture is clear and thickens.

2Remove from heat and allow mixture to cool.

3With electric mixer at high, beat egg whites until stiff, but not dry. Set mixer on low speed and add 6 tablespoons sugar gradually.

4Add salt and vanilla if desired.

5Add cooled cornstarch mixture. Gradually return mixer to high speed and beat well.

6Spread on pie filling.

7Bake at 350° for 8 to 10 minutes until golden brown.
