- 3 egg whites
- 1/8 tsp. salt
- 5 to 6 Tbsp. sugar
- 1/2 tsp. vanilla
- 1/2 c. water
- 1 tsp. cornstarch
- 2 tsp. sugar
Directions

1Combine 2 teaspoons sugar and cornstarch in water in glass measuring cup.

2Microwave for 1 1/2 to 2 minutes, stirring every 20 to 30 seconds until mixture is clear and thick.

3(Watch closely in microwave so it doesn't boil over.)

4Cool slightly.

5Beat egg whites with salt and vanilla until soft peaks form. Gradually, add remaining sugar.

6Stir in cornstarch mixture gradually and beat until meringue stands in stiff peaks.
