- sirloin tip roast (or any roast of choice) or rump roast (any size)
- salt and pepper
Directions

1Heat oven to 500°.

2Salt and pepper roast. Place in roasting pan on low rack with no cover.

3Cook in preheated oven at 500° for 8 minutes per pound.

4Turn oven off and let stand in oven 2 hours. (DO NOT OPEN OVEN DOOR!).

5Drippings make wonderful gravy.
