New Garlic Bread

  • 1 (1 lb.) loaf French or Italian bread
  • 3 Tbsp. olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 (9 oz.) pkg. frozen chopped spinach, thawed and well drained
  • 1 Tbsp. grated Parmesan cheese
  • 1 tsp. dried Italian seasoning
  • 1 large tomato, seeded and chopped
  • 6 oz. Mozzarella cheese
  • 1 Tbsp. dried basil

Directions

    Preheat oven to 400°.

    Cut bread in 1/2 lengthwise; put cut side up on foil lined cookie sheet.

    In medium size skillet, heat oil until hot; add onion and garlic.

    Cook stir until tender, 4 to 5 minutes.

    Add spinach and heat until warm (1 minute).

    Remove from heat; stir in Parmesan cheese and Italian seasoning and mix well.

    Spread spinach mixture evenly over bread halves.

    Sprinkle with tomato, Mozzarella cheese and basil.

    Bake for 8 to 10 minutes or until cheese is melted.

    Cut into slices.
