- 1 (1 lb.) loaf French or Italian bread
- 3 Tbsp. olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 (9 oz.) pkg. frozen chopped spinach, thawed and well drained
- 1 Tbsp. grated Parmesan cheese
- 1 tsp. dried Italian seasoning
- 1 large tomato, seeded and chopped
- 6 oz. Mozzarella cheese
- 1 Tbsp. dried basil
Directions

1Preheat oven to 400°.

2Cut bread in 1/2 lengthwise; put cut side up on foil lined cookie sheet.

3In medium size skillet, heat oil until hot; add onion and garlic.

4Cook stir until tender, 4 to 5 minutes.

5Add spinach and heat until warm (1 minute).

6Remove from heat; stir in Parmesan cheese and Italian seasoning and mix well.

7Spread spinach mixture evenly over bread halves.

8Sprinkle with tomato, Mozzarella cheese and basil.

9Bake for 8 to 10 minutes or until cheese is melted.

10Cut into slices.
