Ingredients

  • 3 lb. chopped chuck or shredded chuck roast beef
  • 2 (16 oz.) cans kidney beans, drained
  • 1 large chopped onion
  • 3 cloves garlic, minced
  • 2 large bell peppers, chopped
  • 2 to 3 chopped chili peppers (number varies to degree of heat desired)
  • 2 (16 oz.) cans whole tomatoes, break up with fork
  • 1 can tomato paste
  • 1 (16 oz.) can imported beer
  • 3 sq. unsweetened chocolate, grated
  • 3 Tbsp. chili powder
  • 1 tsp. salt
  • 1 Tbsp. oil or cooking spray

Directions

    In large saucepan, heat oil (or spray with Pam before heating) and saute meat.

    Add onion, peppers, chilies, garlic, spices and salt.

    Add chocolate, tomato paste, whole tomatoes, beer and 1/2 cup water.

    Add beans.

    Bring to boil, lower heat.

    Cook 1 hour, uncovered.
