- 5 large cucumbers, washed (not peeled)
- 1 c. sugar
- 1 c. vinegar
- 1 Tbsp. pickling salt or canning salt
- 1 tsp. celery seed
- 1 onion, sliced and cut in half
- 1 green pepper, cut in strips
- 1 chopped carrot (optional)
Directions

1Layer cucumbers, onion, pepper and carrot in large gallon jar with a good lid.

2Add sugar, vinegar and spice.

3Shake well and refrigerate.

4Shake once each day for the next 4 to 5 days.

5Will keep months in fridge (if not eaten first).
