- 1 (7 1/2 oz.) can pineapple
- 8 oz. cottage cheese
- 1 pkg. Knox unflavored gelatine
- 1 Tbsp. lemon juice
- 1 egg
- 1 tsp. vanilla
- 1/2 c. sugar
- cinnamon
Directions

1Drain crushed pineapple and save about 1/4 cup of the juice. Blend in blender, pineapple juice, lemon juice, egg, vanilla, sugar and gelatine.

2Blend well.

3Add cottage cheese a little at a time until all is added.

4Blend well until mixture is smooth. Pour into a baking dish.

5Put pineapple on top and sprinkle with cinnamon.

6Bake at 350° for 30 to 35 minutes.

7Chill well and cut and serve.
