  • 2 c. flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. nutmeg
  • 2 c. grated carrots
  • 3 egg whites or 2 1/4 tsp. egg replacer, mixed in 1/4 c. water
  • 1 (20 oz.) can crushed pineapple with juice
  • 1 (8 oz.) can crushed pineapple, drained

    In a large mixing bowl, mix all ingredients together and pour into a 9 x 13-inch nonstick pan.
