Ingredients
- 1 (3 to 4) pound chicken
- 2 (10-ounce) boxes chopped frozen spinach or 3 bunches fresh spinach, finely chopped
- 2 tablespoons olive oil
- 1 egg
- 3/4 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- Salt
- Freshly ground black pepper, to taste
Directions

1Preheat the oven to 350 degrees F. Remove giblets and rinse.

2Boil in water to cover until tender about 10 minutes.

3Chop finely.

4In a saute pan, cook spinach with olive oil until tender.

5Drain until nearly dry.

6In bowl combine all remaining ingredients and mix well.

7Stuff chicken and bake for 1 1/2 hours, basting occasionally.

8Double or triple stuffing for turkey.
