- 1 1/2 c. flour, sifted
- 1/8 tsp. nutmeg
- 1 c. sugar
- 6 Tbsp. Madeira
- confectioners sugar
- 1 tsp. baking powder
- 1/2 c. unsalted butter
- 3 eggs
- 1/2 tsp. grated lemon rind
Directions

1Sift flour, baking powder and nutmeg together.

2Cream butter and sugar together, using electric mixer at medium speed, 5 minutes, or until thick and creamy.

3Add eggs one at a time; beat well after each addition.

4Add flour alternately with Madeira, beginning and ending with flour mixture; beat well after each addition.

5Stir in lemon rind.

6Pour batter into well-greased and floured loaf pan.

7Bake in pre-heated 350° oven 25 to 30 minutes or until cake tests done.

8Let cake cool in pan 5 minutes; turn out on rack to cool completely.

9Dust with sifted confectioners sugar before serving.

10Yields 6 to 8 servings.
