Norwegian Christmas Bread

Ingredients

  • 1/2 c. shortening
  • 4 c. sifted flour
  • 4 rounded tsp. baking powder
  • 2 c. raisins, chopped
  • 1/2 small container mixed fruit (1/2 pineapple; 1/2 cherry)
  • 1 1/2 c. milk
  • 2 eggs
  • 1 tsp. cardamon
  • 1 1/2 c. sugar

Directions

    Cream shortening and sugar; add eggs.

    Sift cardamon, flour and baking powder together (save out a small amount to mix with raisins and fruit).

    Add to mixture, alternating the flour and milk.

    Mix raisins and fruits with flour; add to total mixture. Put into 1 large loaf pan or divide between 2 small loaf pans. Bake at 375° for 10 minutes, then 350° for 40 minutes.
