- 5 large Eggs, beaten
- 1/3 cup Sugar
- 3/4 cup Flour
- 1/2 tsp Salt
- 1/4 tsp Baking powder
- 2 cup Milk

1Beat all together to blend well.

2Melt one teaspoon or a bit less, on a medium hot nonstick pan.

3If you have a flat cast iron pan, that works best.

4Ladle in about 2/3-1 cup of batter and swirl the pan to make a thin even layer.

5Cook until the top starts to firm and dry.

6This will only take a minute or two.

7Flip pancake gently and cook other side until lightly browned.

8Fold pancake into quarters and keep hot until served.

9Optional toppings: yogurt, sour cream, fruit, jam, cottage cheese, whipped cream, syrups, any combination of these.
