Norwegian Honey Cake

  • 4 c. sifted flour
  • 1 c. raisins
  • 1 tsp. baking soda
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ground cinnamon
  • 3 eggs
  • 2 1/3 c. sugar
  • 1 1/2 c. sour cream
  • 2 Tbsp. honey
  • 3 Tbsp. grated orange rind

    Sprinkle 1 tablespoon flour over raisins in a bowl.

    Toss to coat.

    Sift together the remaining flour, baking soda, cloves and cinnamon.

    Beat eggs and sugar in a bowl until fluffy.

    Beat in sour cream and honey.

    Stir in flour mixture just until blended. Add raisins and orange rind.

    Pour into a greased and floured 10-inch angel tube pan.

    Bake in preheated slow oven at 325° for 1 hour and 15 minutes or until cake pulls away from the sides and the top springs back when lightly pressed.
