  • 3 cups green apples, chopped
  • 1 12 cups oil
  • 1 cup white sugar
  • 12 cup brown sugar (packed)
  • 3 eggs
  • 3 cups all-purpose flour (okay to substitute whole wheat or spelt)

  • 12 teaspoon nutmeg
  • 12-1 teaspoon ginger (optional)
  • 1 teaspoon baking soda
  • 12 teaspoon salt
  • 1 cup walnuts or 1 cup pecans, chopped
  • 2 teaspoons vanilla extract
  • 3 tablespoons butter or 3 tablespoons margarine or 3 tablespoons coconut oil
  • 3 tablespoons white sugar
  • 3 tablespoons brown sugar, packed
  • 3 tablespoons milk or 3 tablespoons non-dairy milk substitute
  • 12 teaspoon vanilla extract

Directions

    Place chopped apples in lightly salted water while preparing the batter.

    Beat together oil and white and brown sugars.

    Add eggs, one at a time, until well blended.

    Sift together dry ingredients.

    Add to egg-sugar mixture, mixing well.

    Stir in well drained apples, nuts, and vanilla.

    Spread evenly into lightly oiled and floured bundt or tube type pan.

    Bake at 325 for 1 1/2 hours or until done.

    Cool in pan 20 minutes.

    Turn out onto a wire rack to cool completely.

    To make glaze, mix all glaze ingredients in a small sauce pot and bring to a boil.
