Nutty Chicken Casserole

  • 1 c. macaroni, uncooked
  • 1 1/4 c. shredded sharp Cheddar cheese
  • 2/3 c. sauteed mushrooms
  • 1/2 c. green peppers, chopped and lightly sauteed
  • 1/4 c. sliced pimento
  • 2 c. cooked, cubed, well-seasoned chicken
  • 1 c. cashew nuts, split
  • 3/4 c. well-seasoned chicken broth
  • 2 (10 1/2 oz.) cans cream of chicken soup
  • 1 3/4 pkg. cheese crackers, coarsely crushed

Directions

    Cook macaroni until almost tender.

    Drain and put into a greased 9 x 13-inch pan.

    Scatter over the macaroni in layers the cheese, mushrooms, green peppers, pimento, chicken and

    nuts.

    Mix soup and broth and pour over entire contents of pan.

    Top with crushed cheese crackers and bake until slightly browned and bubbles appear around edges at 350° for 20 to 25 minutes.
