- 1 (8 oz.) can crushed pineapple in natural juice
- 3/4 c. shredded carrots
- 3/4 c. chopped celery
- 1 c. chopped pears (unpeeled)
- 1/4 c. raisins
- 1/3 c. plain low-fat yogurt
- 2 Tbsp. low-fat peanut butter
- 1/4 tsp. ginger
Directions

1Drain pineapple, but save one tablespoon.

2In large mixing bowl, combine pineapple, carrot, celery, pears and raisins.

3In another bowl mix yogurt, peanut butter, ginger and one tablespoon pineapple juice.

4Stir yogurt mixture into fruit, making sure to coat all fruit.

5Cover and chill.

6Makes 6 servings.
