  • 1 carrot, shredded
  • 4 scallions, chopped, white parts (reserve green parts for garnish)
  • 2 teaspoons peanut oil
  • 1/2 teaspoon curry powder

  • 1/4 cup peanut butter
  • 1/2 teaspoon lime juice
  • 1 1/2 teaspoons brown sugar
  • 1 1/2 teaspoons soy sauce
  • 1 1/2 teaspoons fish sauce
  • 1/4 - 1/2 teaspoon sambal oelek (to taste)
  • 8 ounces coconut milk
  • 2 teaspoons fresh Thai basil

    In a wok or frying pan heat oil.
