Pumpkin Cranberry Bread

- 2 1/4 c. all-purpose flour
- 1 Tbsp. pumpkin pie spice
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 2 c. granulated sugar
- 1/2 c. vegetable oil
- 1 c. pumpkin
- 1 c. cranberries, chopped
Directions

1In a large bowl, combine flour, pumpkin pie spice, baking soda and salt.

2In small mixing bowl, beat eggs; beat in sugar, oil and pumpkin.

3Pour pumpkin mixture into dry ingredients. Stir just until moistened.

4Stir in cranberries. Spoon batter into 2 greased and floured 8 x 4-inch loaf pans.

5Bake in preheated 350° oven for 60 minutes or until wooden toothpicks comes out clean. Cool for 5 to 10 minutes. Remove from pans.
