  • 4 medium tomatoes, halved
  • peanut or vegetable oil
  • 1/2 tsp. salt
  • 2/3 c. shredded Cheddar cheese
  • 1/2 c. dried bread crumbs
  • 1/2 c. chopped peanuts
  • 1/4 c. butter or margarine, melted
  • 3/4 tsp. dried leaf basil, crushed
  • 1/8 tsp. cayenne pepper

    Preheat oven to 350°.

    Brush tomato skins with oil.

    Place, cut side up, in 13 x 9-inch baking dish.

    Sprinkle with salt and set aside.

    Combine remaining ingredients in medium bowl, spoon mixture onto tomatoes.
