  • 2 cans raw small peeled potatoes
  • vegetable oil
  • salt and pepper
  • 2 thick slices onion
  • 2 Tbsp. butter
  • 1 jar pimentos
  • 1 large green pepper, finely diced
  • 1 Tbsp. chopped parsley

Directions

    Drain potatoes from can.

    Fry in deep vegetable oil until tender and browned.

    Drain and sprinkle with salt and pepper. Saute onion in butter until deep brown and remove.

    Add pimentos and green pepper.

    Add cooked potatoes.

    Cook and stir a few minutes.

    Serve hot on a platter garnished with parsley.
