- 1 c. oat bran
- 2 tsp. baking soda
- 1 ripe banana, mashed
- 1 1/2 c. plain low-fat yogurt
- 2 Tbsp. butter
- 1 c. all-purpose flour
- 1 Tbsp. sugar
- 2 tsp. vanilla
- 4 egg whites
- pecans (optional)
Directions

1In medium bowl, toss together bran, flour, soda and sugar. Stir in mashed banana and vanilla.

2Add yogurt.

3In separate mixing bowl, beat egg whites until soft peaks form.

4Fold into batter.

5Cook on hot griddle until bubbles appear on surface.

6Flip over and cook until done.

7Serve hot with honey or fresh fruit. Sprinkle with chopped pecans if desired.
