  • 1 c. oat bran
  • 2 tsp. baking soda
  • 1 ripe banana, mashed
  • 1 1/2 c. plain low-fat yogurt
  • 2 Tbsp. butter
  • 1 c. all-purpose flour
  • 1 Tbsp. sugar
  • 2 tsp. vanilla
  • 4 egg whites
  • pecans (optional)

Directions

    In medium bowl, toss together bran, flour, soda and sugar. Stir in mashed banana and vanilla.

    Add yogurt.

    In separate mixing bowl, beat egg whites until soft peaks form.

    Fold into batter.

    Cook on hot griddle until bubbles appear on surface.

    Flip over and cook until done.

    Serve hot with honey or fresh fruit. Sprinkle with chopped pecans if desired.
