  • 1 14 cups boiling water
  • 1 cup quick oats
  • 1 12 cups all-purpose flour
  • 12 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 12 cup butter, softened (margarine, shortening may be substituted)
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 eggs

    Preheat oven to 350 degrees F.

    Grease and flour 9 X 13 inch baking pan.

    In a medium bowl, pour boiling water over quick oats and stir.

    Let sit to cool.

    In another medium bowl, mix together flour, salt, baking soda and cinnamon.

    Set aside.

    In a large bowl, cream together sugars and butter.

    Add vanilla, and eggs, one at a time.

    Stir in oat mixture and dry ingredients until blended.

    Pour batter into the prepared baking pan.

    Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean.

    Place pan on wire rack to cool.

    After 15 minutes, remove from pan and continue cooling on rack.

    Cool at least 10 or 15 minutes more if serving warm.

    Cool at least an hour or until cake is cool to the touch before icing or frosting cake.

    Cover and refrigerate leftover cake.
