  • 2 c. rolled oats, measured after grinding in blender
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. oil
  • 1/2 c. honey
  • 1 egg
  • 1/2 c. any dried fruit, chopped
  • fruit juice (any kind)

Directions

    Put the egg in a cup.

    Add fruit juice to measure a cup. Combine oats, baking powder and salt.

    Combine honey, oil, juice, egg and dried fruit.

    Mix together until blended.

    Fill and slightly mound in greased muffin tins.

    Bake at 325° for 20 minutes or until done.

    Makes about 12 muffins.
