- 1 tablespoon butter or margarine
- 1 onion finely chopped
- 2 tablespoons oatmeal Medium
- salt
- pepper
- 1 pint chicken stock
- 1/2 pint milk
- 1/4 pint cream
- 1 tablespoon chopped parsley
Directions

1Melt the butter or margarine in a saucepan.

2Add chopped onion, cook until soft but not brown.

3Add oatmeal, salt and pepper, cook for a few minutes.

4Add stock slowly, stirring constantly.

5Bring to a boil and simmer, covered, for 1/2 hour.

6Liquidize for 1 minute or put through a sieve.

7Return to saucepan, add milk, reheat.

8Serve with cream and chopped parsley as garnish.
