- 4 large boneless chicken breasts, halved
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. oil
- 2 Tbsp. butter or margarine
- 3 Tbsp. chopped fresh chives or green onions
- 1/2 of a lemon, juiced
- 2 Tbsp. brandy or cognac (optional)
- 3 Tbsp. chopped parsley
- 2 tsp. Dijon-style mustard
- 1/4 c. chicken broth
Directions

1In heated skillet melt half the butter and oil.

2Cook chicken over high heat for 2 minutes on each side.

3Transfer to warm platter.

4Add chives (or green onions), lemon juice, brandy, parsley and mustard to pan.

5Cook 15 seconds, whisking constantly. Whisk in broth.

6Stir until sauce is smooth.

7Whisk in remaining butter and oil.

8Pour sauce over chicken.

9Serve immediately. Good with pasta or rice.
