Okara Apple Cheesecake

Ingredients
- 150 grams Fresh okara
- 50 grams Silken tofu
- 50 grams Pancake mix
- 60 grams Milk
- 50 grams Processed cheese
- 3 tbsp Sugar
- 1 Egg
- 1 tbsp Lemon juice
- 2 Apples
- 3 tbsp Sugar
- 1 tsp Lemon juice
- 1 tsp Butter
- 1 tsp Cinnamon
Directions

1Cut the apples into quarters, remove the core and peel.

2Cut each piece into 6 or 8 wedges.

3Put all the filling ingredients into a pan.

4Cover with a lid and simmer until soft.

5(You can add the cinnamon at the last stage if you want.)

6Remove the lid and saute the apple slices until browned.

7Be sure to brown them properly at this stage.

8Note: Don't wash the pan afterwards, since it will be used again.

9Preheat the oven to 350F/180C.

10Put the ingredients into a bowl and mix together.

11Add milk, finely shredded cheese and sugar in a pan, and heat to dissolve the sugar and cheese.

12Add this mixture to the bowl with the ingredients.

13Finally, add the egg and lemon juice and mix well.

14It will be a very thick batter.

15Butter a tart mold and pour in the batter.

16Smooth out the surface.
-
17Line the top with the cooked apple slices.

18Start with the thicker slices around the rim, and overlap the slices going in circles towards the middle.

19Roll up a slice or two for the center.

20Bake for 40 minutes in a 350F/180C oven.

21In the meantime, make a quick glaze.

22Put 1 tablespoon of sugar in the pan used earlier to cook the apples, add 2 tablespoons of water, and heat.

23Turn off the heat when the sugar has melted.

24Brush the glaze on the freshly baked cake to finish.

25Cool, and chill in the refrigerator before eating.

29If you let it rest for a day in the refrigerator, it becomes really moist.
