  • 1 1/2 c. okra, sliced 3/4-inch thick
  • 1 1/2 c. squash, diced
  • 1 c. carrots, sliced thinly
  • 1/2 c. chopped onion
  • 3 Tbsp. margarine, melted
  • 1 tsp. salt
  • 1/4 tsp. black pepper

Directions

    Cook okra, squash and carrots with salt in water, enough to cover slightly, covered, for 7 minutes.

    Add onion and pepper; cook for 3 or 4 minutes, until all are lightly crisp.

    Remove from heat; drain in colander.

    Pour in dish and toss with melted margarine.
