- 1 1/2 c. okra, sliced 3/4-inch thick
- 1 1/2 c. squash, diced
- 1 c. carrots, sliced thinly
- 1/2 c. chopped onion
- 3 Tbsp. margarine, melted
- 1 tsp. salt
- 1/4 tsp. black pepper
Directions

1Cook okra, squash and carrots with salt in water, enough to cover slightly, covered, for 7 minutes.

2Add onion and pepper; cook for 3 or 4 minutes, until all are lightly crisp.

3Remove from heat; drain in colander.

4Pour in dish and toss with melted margarine.
