- 4 slices bacon
- 1 1/2 c. boiling water
- 2 c. sliced okra
- 2 c. chopped tomatoes
- 1 c. uncooked rice
- salt and pepper
- 1/4 tsp. dried basil
Directions

1Saute bacon until crisp and set aside.

2Add the boiling water to the bacon drippings.

3Add okra and tomatoes; let come to a brisk boil.

4Add rice, salt, pepper and basil.

5Cover and cook over low heat about 30 minutes or until rice is tender and fluffy. Add more water during cooking, if needed.

6When ready to serve, garnish with the bacon crumbled on top.

7Yields 6 servings.
