  • 4 c. lean, cubed beef
  • 1 beef soup bone
  • 4 c. fresh tomatoes, finely chopped
  • 4 c. fresh butter beans
  • 2 c. sliced okra
  • 4 c. cubed ham
  • 1 ham bone
  • 4 c. fresh corn, cut from cob
  • salt and pepper to taste

Directions

    Barely cover ham, beef and bones with water and cook until tender.

    Skim off fat if necessary.

    Add butter beans, tomatoes, salt and pepper.
  4. 4
    When beans are half cooked, add okra.

    Add corn during last 15 minutes of cooking.

    If necessary, add more water. This makes a hearty, thick soup.

    Serve over rice or with biscuits or cornbread.
