- 4 ounces okra
- 1 onion
- 1 garlic clove
- 1 tomatoes
- 1 tablespoon oil
- 1 teaspoon tomato puree
- salt
- pepper
- 14 teaspoon sugar
- 12 teaspoon mixed herbs
- 1 teaspoon lemon juice
- 12 cup water
Directions

1Top and tail the okra, rinse in cold water.

2Peel and slice the onion.

3Peel and finely chop the fresh garlic.

4Wash and chop the fresh tomatoes.

5Heat the oil in a pan over a moderate heat, and fry the onion and garlic gently for 3-4 minutes, until softened but not browned.

6Add the okra, and continue to cook gently for a further 4-5 minutes, until beginning to soften.

7Add the chopped tomatoes, tomato puree or ketchup, salt, pepper, sugar, herbs, and lemon juice.

8Add about 1/2 cup of water or tomato juice, just enough to half cover the vegetables in the pan, and simmer for 20-30 minutes, until the okra is tender.

9Taste the sauce and adjust the seasoning if necessary.

10Serve hot or cold (but I prefer it hot).
