Old Bay Squash Casserole

- 1 lb summer squash, blanched
- 1 medium onion
- 1 egg
- 15 unsalted saltine crackers
- 2 tablespoons butter
- 1 cup sharp cheddar cheese, shredded
- Old Bay Seasoning, to taste
Directions

1Chop squash in food processor.

2Add onion, egg, crackers and butter.

3Process until pureed.

4Pour into a small buttered casserole dish.

5Spread cheddar cheese on top.

6Push some of the cheese down into the squash mix.

7Bake at 350 degrees for 30 minutes.

8Let stand for 5 minutes after removing from oven.

9Sprinkle Old Bay seasoning on top to taste.
