  • 1 (9-inch) graham cracker crust
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1/2 c. sugar
  • 1 Tbsp. lemon juice
  • 1/4 tsp. vanilla
  • dash of salt
  • 2 eggs

Directions

    Preheat oven to 325°. In bowl, combine cream cheese, sugar, lemon juice, vanilla and salt. Mix until well blended. Add eggs, one at a time, mixing well after each addition. Remove inverted plastic lid over pie crust. Place crust (leave in pie tin) on baking sheet; pour in filling. Bake for 25 to 30 minutes or until inserted knife comes out clean.
