  • 2 1/4 c. flour, divided
  • 1/2 c. 10x (confectioners) sugar
  • 1 c. (2 sticks) butter
  • 4 eggs
  • 1 1/2 c. sugar
  • 1/3 c. lemon juice
  • 1 Tbsp. lemon peel, grated
  • 1 tsp. baking powder
  • 1/2 tsp. salt

    Preheat oven to 350°.

    Lightly grease a 13 x 9-inch pan.

    In a large bowl, combine 2 cups of the flour with 10x sugar.

    Cut in butter until crumbly.

    Pat evenly in pan.

    Bake 15 to 20 minutes or until lightly browned.

    In a large bowl, beat eggs until foamy. Add remaining ingredients.

    Pour over baked crust.

    Bake for 25 to 30 minutes longer or until lemon topping is set and lightly browned.
