Old Fashioned Light Fruit Cake

- 24 oz. (6 c.) unchopped pecans
- 12 oz. whole candied cherries
- 1/2 lb. soft butter
- 2 1/4 c. sugar
- 1 oz. brandy flavoring
- 1 tsp. salt
- 1 tsp. nutmeg
- 12 oz. chopped candied pineapple
- 1 lb. seedless white raisins
- 6 eggs
- 4 c. all-purpose flour
- 1 1/2 tsp. cinnamon
Directions

1Mix butter and sugar until creamed.

2Add eggs, one at the time, beating after each addition until yolk is broken.

3Then add flavoring.

4Sift flour, salt, nutmeg and cinnamon together.

5Add to sugar mixture gradually.

6Work in nuts and fruit with a heavy spoon.

7Pour into prepared pans filling 2/3 full.

8Bake at 275°, tube pan about 3 hours, 9 x 5 x 3-inch loaf pans about 2 hours.
