Ingredients
- 1 lb. boneless pork, cooked and chopped
- 1 c. cornmeal
- 1 (14 1/2 oz.) can chicken broth
- 1/4 tsp. dried thyme
- 1/4 tsp. salt
- 1/2 c. flour
- 1/4 tsp. pepper
- about 3 Tbsp. oil
Directions

1In a large saucepan, combine pork, cornmeal, chicken broth, thyme and salt.

2Bring to a boil, stirring often.

3Reduce heat and simmer about 2 minutes or until mixture is very thick, stirring constantly.

4Line an 8-inch square pan with waxed paper. Extend 3 to 4-inches above top of pan.

5Spoon pork mixture into pan. Cover and chill in refrigerator 4 hours or overnight.

6Unmold. Cut into squares.

7Combine flour and pepper. Dust squares with flour mixture and brown on all sides in hot oil. Can put in loaf pan and slice before flouring and browning.
