- 2 tablespoons butter
- 12 cup tapioca, 1/8 inch wide
- 4 cups milk
- 14 cup sugar
- 1 cinnamon stick
- 1 lemon, zest of, freshly grated
Directions

1Melt butter in a saucepan and add tapioca pearls.

2Cook for 2 minutes.

3Add milk, sugar and cinnamon stick.

4Simmer, stirring occasionally, until the tapioca is translucent and soft, 30 to 40 minutes.

5Stir in lemon zest.

6Serve warm or cold.
