  • 2 tbsp extra virgin olive oil
  • 1/4 tsp minced garlic
  • 1 tbsp fresh lemon juice, or more to taste
  • 1 salt, to taste
  • 1 pepper, to taste
  • 1/4 cup chopped pitted kalamata or other cured black olives

Directions

    Place extra virgin olive oil and the garlic, lemon juice, and olives in a food processor or blender until well blended.

    Or, you can use a fork to mash everything in a small bowl until they become a paste.

    Taste for seasoning.

    Add salt and pepper to taste, and more lemon juice as necessary.
