Ingredients

  • 4 skinless chicken breasts
  • 3/4 cup breadcrumbs
  • 2 tablespoons flour
  • 2 tablespoons italian seasoning
  • 1 tablespoon hemp seeds (available from Costco)
  • 1 tablespoon milled flax seed (available in most grocery stores)
  • 1 tablespoon onion powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic
  • olive oil (for frying)

Directions

    In a frying pan cook chicken with 1/4 cup of water until almost cooked through; steams chicken and keeps moist.

    While chicken is cooking, combine the next 8 ingredients in a large bowl: bread crumbs, flour, Italian seasoning, hemp seeds, flax seeds, onion powder, black pepper, salt.

    In a smaller bowl mix: 2 eggs, lemon juice, garlic.

    Cut each chicken piece in 1/2 or 1/3. Dip in egg mixture (small bowl), then in bread mixture (large bowl and fry with olive oil for about 5 min each side. Then serve and enjoy! ------------------------------ Note: You can double the hemp seeds and milled flax seeds for more omega 3 & 6 nutritional value.
