- 2 Tbsp. cooking oil
- 1 c. sliced fresh mushrooms
- 6 eggs, slightly beaten
- 1/3 c. milk
- 1 tsp. chopped green onion
- salt and pepper to taste
- shredded cheese (to garnish)
- parsley (to garnish)
Directions

1In cooking oil, saute mushrooms gently over low heat.

2Combine eggs, milk, onion and seasonings.

3Add to the mushrooms and cook slowly.

4As egg mixture sets, lift gently with spatula to allow uncooked portion to flow underneath.

5Fold in half.

6Garnish with shredded cheese and parsley.

7Makes 3 to 4 servings.
