  • 2 Tbsp. cooking oil
  • 1 c. sliced fresh mushrooms
  • 6 eggs, slightly beaten
  • 1/3 c. milk
  • 1 tsp. chopped green onion
  • salt and pepper to taste
  • shredded cheese (to garnish)
  • parsley (to garnish)

Directions

    In cooking oil, saute mushrooms gently over low heat.

    Combine eggs, milk, onion and seasonings.

    Add to the mushrooms and cook slowly.

    As egg mixture sets, lift gently with spatula to allow uncooked portion to flow underneath.

    Fold in half.

    Garnish with shredded cheese and parsley.

    Makes 3 to 4 servings.
