- 2 c. Egg Beaters
- 2 to 3 fresh mushrooms, sliced
- 1 to 2 Tbsp. chopped green pepper
- 1 slice (1 oz.) fat free American cheese or 1 oz. shredded fat free cheese
Directions

1In a small frying pan (6 to 8-inch), spray with butter flavored Pam.

2Saute mushrooms and green pepper until tender. Remove and set aside.

3Re-spray pan.

4Over medium heat, cook Egg Beaters, moving cooked egg to center to make omelet.

5When eggs are cooked, turn off heat.

6Arrange vegetables on 1/2 of omelet and cheese over the vegetables.

7Fold in half.
