- 1/8 teaspoon freshly ground black pepper
- 1 teaspoon unsalted butter
- 1 teaspoon olive oil
- Special equipment: 8-inch omelet pan
Directions

1Whisk the eggs in a small bowl with the fresh herbs, kosher salt, and freshly ground pepper.

2Heat the omelet pan over medium-high heat and melt the butter with olive oil.

3Reduce the heat to medium.

4Pour in the eggs.

5Stir with a fork until the eggs start to set.

6Check to see if the eggs are pulling away from the side of the pan.

7Shake the pan to loosen the omelet.

8Fold in 1/2 and serve.
