One Bowl Layer Cake

Ingredients

  • 1/2 c. Crisco shortening
  • 2-1/4 c. sifted flour, White Lily self-rising
  • 3 tsp. baking powder (omit if self-rising flour used)
  • 1 tsp. salt (omit if self-rising flour used)
  • 1-1/2 sugar
  • 1 c. milk (1/3 c. canned evaporated milk, 2/3 c. sweet milk)
  • 2 eggs if large (use 3 eggs if medium)
  • 1 tsp. vanilla

Directions

    Stir shortening in large mixer bowl just enough to soften. Sift dry ingredients 2-3 times.

    Put over the Crisco.

    Add about 3/4 cup of the milk and mix until all flour is dampened.

    Beat eggs 2 minutes or more.

    Add eggs and remaining milk; beat 3 minutes longer, scraping bowl and spoon often.

    Add vanilla.

    Pour batter into 3 greased pans (Crisco) and floured pans.

    Bake in moderate oven (375°) for about 25 minutes.
