- 1 Tbsp. active dry yeast (not RapidRise)
- 1/4 c. very warm water
- 1 1/2 c. warm water
- 1 tsp. salt
- 4 to 5 c. unbleached flour
Directions

1In a bowl, dissolve yeast in 1/4 cup warm water.

2Let yeast proof for 10 minutes until foamy and chalky looking.

3Add 1 1/2 cups of water and salt.

4Knead in bowl several times; takes 10 minutes.
