  • 1 Tbsp. active dry yeast (not RapidRise)
  • 1/4 c. very warm water
  • 1 1/2 c. warm water
  • 1 tsp. salt
  • 4 to 5 c. unbleached flour

Directions

    In a bowl, dissolve yeast in 1/4 cup warm water.

    Let yeast proof for 10 minutes until foamy and chalky looking.

    Add 1 1/2 cups of water and salt.

    Knead in bowl several times; takes 10 minutes.
