- 1 lb. bacon, diced (remove some fat)
- raw onion rings from 2 very large sweet onions (grapefruit size)
- 1/2 c. butter
- 2 c. soda cracker crumbs
- 1 lb. Cheddar cheese (mild)
- 4 eggs, slightly beaten
- 1 1/2 c. milk
- salt and pepper
Directions

1Partially cook bacon pieces.

2Remove.

3Add onion rings to bacon fat.

4Saute until soft.

5Add onions to bacon.

6Melt butter in a large casserole dish.

7Add crumbs to butter; mix.

8Pat mixture up sides of casserole dish and cover bottom.

9Line with grated cheese.

10Add bacon and onion mixture.

11Combine eggs and milk.

12Pour over all.

13Season with salt and pepper.

14Bake at 350° for about 45 minutes.
