- 4 jumbo onions
- 1 stick margarine
- 3 eggs
- 5 oz. evaporated milk
- 1 stack Ritz crackers
- 1 1/2 c. shredded Longhorn/Colby cheese, divided
- salt and pepper to taste
- 3 Tbsp. margarine
Directions

1Peel and wash onions.

2Cut into chunks.

3Boil until tender; drain.

4Melt margarine in onions and saute for 3 minutes.

5Set aside.

6Mix milk and eggs; beat well.

7Add onions, 1 cup grated cheese and 25 crumbled crackers.
