Onion-Corn Bread Casserole

- 1 1/2 c. chopped onions
- 1/4 c. margarine
- 1 c. sour cream
- 1/4 tsp. salt
- 1 c. shredded sharp Cheddar cheese
- 1 (7 1/2 oz.) pkg. corn muffin mix
- 2 eggs, beaten
- 1/2 c. milk
- 1 (16 oz.) can cream-style corn
- 1/4 tsp. cayenne pepper
- 1 Tbsp. Parmesan cheese
Directions

1Saute onion in margarine in skillet; cool.

2Add sour cream, salt and 1/2 cup Cheddar cheese.

3Combine muffin mix, eggs, milk, corn and cayenne pepper in a bowl.

4Pour into greased 9-inch baking pan.

5Spoon onion mixture on top.

6Top with remaining Cheddar cheese and Parmesan cheese.

7Bake at 425° for 30 minutes.

8Yield: 6 to 8 servings.
