  • 3 to 4 c. chopped onions
  • 1/4 c. melted margarine
  • 1 1/2 c. shredded Cheddar cheese
  • 1 1/2 c. self-rising corn meal
  • 2 Tbsp. sugar
  • 2 eggs
  • 1/2 tsp. salt
  • 1 can creamed corn
  • 1/2 c. milk
  • 1/4 c. Wesson oil
  • dash of hot pepper (optional)
  • 1 c. sour cream

Directions

    Preheat oven to 350°.

    Cook onions in melted margarine.

    Mix all ingredients together (reserve 1/2 of the cheese); add cooked onions.

    Pour into well-greased casserole dish; top with remaining cheese.
