- 8 c. sliced Vidalia onions
- 1/4 c. olive oil
- 1 tsp. chopped garlic
- salt and freshly ground black pepper to taste
- partially baked 10-inch pie shell
- 1/2 c. grated Swiss cheese
- 1 can flat anchovy fillets
- 9 pitted black olives
Directions

1Combine onions, oil and garlic in a large heavy pot.

2Cover and braise slowly for 40 to 45 minutes.

3After 30 minutes, remove the cover.

4Season with salt and pepper and cook, uncovered, until tender and golden.

5Stir from time to time; do not brown.

6Lift onions into pie shell with a slotted spoon to remove excess moisture.

7Sprinkle with grated cheese and decorate with anchovy fillets and black olives.

8Bake in preheated 400° oven for 20 minutes.
