  • 2 1/2 lb. potatoes
  • 1 Tbsp. olive oil
  • 1 pkg. Lipton onion soup mix
  • 1 plastic bag
  • 1 lb. penne, ziti or bow-tie pasta
  • 1 tsp. butter
  • 1 garlic clove, pressed
  • 4 oz. sliced baked ham, cut into thin strips
  • 3/4 c. chicken broth
  • 1/4 c. heavy cream
  • 2 c. sugar snap peas
  • 1/8 tsp. black pepper
  • 1 1/4 c. freshly grated Parmesan cheese
  • 4 large red-skinned potatoes, cut in 1/2-inch cubes (about 3 c.)
  • 1/4 c. water
  • 3 tsp. olive oil, divided
  • 1 garlic clove, pressed
  • 1 c. chopped onion
  • 1 yellow bell pepper, cored and thinly sliced
  • 1 green or red bell pepper, cored and thinly sliced
  • 6 large eggs
  • 1/3 c. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper

    Preheat oven to 400°.

    In glass pie plate or microwave-safe shallow dish, combine potatoes and water.

    Cover with wax paper and then microwave on High 10 minutes, stirring once halfway through cooking.

    Meanwhile, in 8 or 9-inch nonstick skillet, heat 2 teaspoons olive oil over medium-high heat.

    Add garlic and cook 30 seconds.

    Add onions and peppers; cook, covered, 10 minutes stirring occasionally.
