  • 2 1/4 c. flour, divided
  • 1 1/4 tsp. baking powder
  • 1 1/4 tsp. salt
  • 1/4 tsp. white pepper
  • 2 c. buttermilk
  • 1 1/2 Tbsp. vegetable oil
  • 2 eggs, separated

Pour oil to depth of 2-inches into a Dutch oven; heat to 375°. Fry, turning once, until golden brown. Drain on paper towels and serve immediately. Yield: 4 servings.
